Little-known farina arsa, a toasted wheat flour, is used in a rich-flavored version of the classic orecchiette. Farina arsa pasta comes from a little-known Pugliese tradition dating back to the times when local nobles allowed the peasants to glean from the fields after the wheat harvest. Since the fields had already been burned clean, gleaners found lots of blackened grains, which they were forced to incorporate into their pasta. Today this limited edition orecchiette, combines beautifully with vegetable condiments such as zucchini flowers, fresh peas, golden squash, white fish, and other contrastingly colored foods. A rare find.
